VERY EASY RECIPE

Minestrone soup

A classic vegetable soup that makes everyone happy. Combine with crispy bread croutons for a filling meal.

INGREDIENTS

  • 150 g ILIS thimbles
  • 75 g red onion
  • 50 g carrot
  • 40 g celery
  • 50 g leek
  • 60 g green beans
  • 60 g potatoes
  • 125 g tomato concasse
  • 1 Chicken bouillon cube
  • 60 g olive oil
  • 2-3 cloves of garlic
  • 20 g basil, chopped
  • ¼ bunch of parsley
  • 100 g grated Parmesan
  • Salt and pepper

For the croutons

  • 250 g sandwich bread, cut into cubes
  • 10 g garlic oil
  • 10 g melted butter
  • Salt

INSTRUCTIONS

For the Croutons

  • Mix all the ingredients and put them in a baking pan lined with parchment paper.
  • Bake at 180 °C until crispy.

For the soup

  • After chopping all the vegetables into cubes, sauté them with olive oil (except from the tomatoes and potatoes) over low heat until golden.
  • Then add the chicken broth, salt and pepper and bring to a boil.
  • When half-cooked, add the tomatoes, potatoes, garlic, parsley, basil as well as the pasta and let it cook.
  • Serve with grated parmesan cheese and the croutons.
