Our Workshop

ILIS PASTA IS PRODUCED IN MODERN, SELF-OWNED FACILITIES OF 1000 m2 NEAR THE VILLAGE OF THOLO IN ELIS, GREECE.

Our pasta's superior quality is evident in its cooking: ILIS pasta doesn't become soggy, doesn't break during cooking, absorbs sauces better and, of course, is much more flavourful. We can deliver quality this high thanks to the right choice of raw materials, our staff's experience and know-how, the use of advanced equipment and a special drying process in two stages that simulates natural drying. ILIS pasta can be stored for over two years, and it doesn't contain any preservatives.

MANUFACTURING

EVERY STAGE OF PRODUCTION IS MONITORED ACCORDING TO VERY STRICT CRITERIA FOR QUALITY AND HYGIENE, AND ALWAYS UNDER HUMAN SUPERVISION.

We always choose semolina from 100% durum wheat and pure, certified ingredients.

MIXING AND KNEADING

The semolina is mixed with water in special stainless-steel bowls. At this point we add eggs, milk, vegetable juices and other materials according to pasta type.

The dough is cut or extruded through special dies made of phosphor bronze and teflon. This is how each pasta type takes its unique shape.

PRE-DRYING

Drying is one of the most difficult stages of pasta-making. First, the pasta goes through a device called trabbato, where they harden on the outside but remain soft on the inside.

Hot air is used to reduce remaining moisture to around 11%, in order for the pasta to harden and be preserved for a long time without additives.

PACKING AND STORAGE

The pasta returns gradually to room temperature, then weighed and packaged. After that, it is stored in the controlled environment of our warehouse.

We apply specific procedures for the manufacture of a consistently high-quality and safe product, according to predefined requirements. As part of our new products development phase, we have created and implemented a testing system in order to ensure that the end product fulfils its design requirements. Developing new products and improving existing ones is something that adds value to our brand, strengthens our image, satisfies our customers' needs and expectations and helps us offer products and services of the highest standards.

OUR FACILITIES HAVE BEEN CERTIFIED BY INTERNATIONAL STANDARDS FOR QUALITY AND SAFETY, AND OUR PRODUCTS ARE TESTED REGULARLY BY EXTERNAL, ACCREDITED LABORATORIES.
