Pasta salad with tuna

Here's an idea for a quick meal that will last in the fridge and is also ideal for your lunchbox. Ask your kids to help you with the dressing!

INGREDIENTS

  • 500 g ILIS twists
  • Juice of 2 lemons
  • ½ onion, finely chopped
  • 2/3 cup olive oil
  • 2¼ cup corn
  • The leaves from 2 fresh thyme sprigs, finely chopped
  • 1 tsp salt
  • ½ tsp pepper, freshly ground
  • 1 large canned tuna in water, well-drained
  • 230 g red or other coloured peppers, cut into large cubes

INSTRUCTIONS

  • Cook the pasta in plenty of salted water, until it becomes al dente.
  • Drain them and pour cold water over them to cool them down.
  • In a container that closes very well, put the lemon juice, olive oil, onion, thyme, salt and pepper and shake vigorously to mix the ingredients.
  • Add salt and pepper to taste.
  • Put the pasta, vinaigrette, tuna, corn and peppers in a large bowl and mix gently.

Tips

  • Store in the fridge for 2 days.
  • You can replace the tuna with salmon or shrimps. You can also add extra ingredients like cherry tomatoes and olives.
