VERY EASY RECIPE
Pasta salad with tuna
Here's an idea for a quick meal that will last in the fridge and is also ideal for your lunchbox. Ask your kids to help you with the dressing!

INGREDIENTS
- 500 g ILIS twists
- Juice of 2 lemons
- ½ onion, finely chopped
- 2/3 cup olive oil
- 2¼ cup corn
- The leaves from 2 fresh thyme sprigs, finely chopped
- 1 tsp salt
- ½ tsp pepper, freshly ground
- 1 large canned tuna in water, well-drained
- 230 g red or other coloured peppers, cut into large cubes
INSTRUCTIONS
- Cook the pasta in plenty of salted water, until it becomes al dente.
- Drain them and pour cold water over them to cool them down.
- In a container that closes very well, put the lemon juice, olive oil, onion, thyme, salt and pepper and shake vigorously to mix the ingredients.
- Add salt and pepper to taste.
- Put the pasta, vinaigrette, tuna, corn and peppers in a large bowl and mix gently.
Tips
- Store in the fridge for 2 days.
- You can replace the tuna with salmon or shrimps. You can also add extra ingredients like cherry tomatoes and olives.
