Traditional vegetable trahanas soup
We love traditional flavours, so here we propose a colourful recipe for Greek trahanas with a rich vegetable flavour. Served with feta, of course!

INGREDIENTS
- 500 g ILIS vegetable trachanas (frumenty)
- 1 red onion, finely chopped
- 1 carrot, diced
- 1 medium potato, diced
- 1 zucchini, diced
- 2 fresh mushrooms
- 50 g olive oil
- 2 fresh tomatoes, grated
- 200 g feta cheese (optional)
- 1 bunch of parsley, finely chopped
- 30 ml wine
INSTRUCTIONS
- Pour the olive oil in a big pot and warm it up over heat.
- Lower heat and add the carrot, potato, zucchini, mushrooms and the onion. Sauté for about 10 minutes, stirring occasionally.
- Cook the vegetables until golden, add the wine and wait until it evaporates.
- Turn heat up to high, add the tomato and one liter of warm water.
- Bring the water to a boil. Add the vegetable trahanas (frumenty) and lower the heat for about 20 minutes. The trahanas is ready!
- Add the grated feta cheese and parsley and serve in a deep plate.
