Chicken with sage, rakomelo and casarecce pasta with turmeric

INGREDIENTS

  • 4 chicken thighs, boneless
  • 1 package of turmeric striftaria (casarecce) by ILIS'
  • 1 clove of garlic, mashed
  • 1 tbs honey
  • 1 large onion, mashed
  • 1 cup white wine vinegar or balsamic white vinegar
  • ½ cup olive oil
  • ½ cup rakomelo (raki and honey drink that contains alcohol)
  • Salt
  • Green pepper, freshly ground
  • 2-3 sprigs of fresh sage
  • The juice of 1 medium-sized lemon
  • Mizithra (fresh Greek cheese)

INSTRUCTIONS

  • Wash and dry the chicken pieces. Sprinkle with salt and pepper, and rub with the garlic. Add the rakomelo and let it marinate in the fridge for 1-2 hours.
  • In a pot, sauté the chicken in the olive oil until golden and has a nice crust. Remove the chicken, add the onion and sauté until slightly golden. Add the chicken to the onion and then the rakomelo, along with a cup of water. Cover the pot and simmer for 45-50 minutes.
  • Pour the vinegar, bring to a boil until it evaporates, and then add the honey along with the sage. Stir, taste and add vinegar if needed. Simmer for 10 more minutes and pour the lemon juice over the chicken.
  • Cook the pasta according to the instructions on the package, strain and add it in the sauce and chicken mixture. Sprinkle with mizithra (fresh cheese) and serve.
