Shrimp orzotto with vegetables, feta cheese and truffle olive oil

A nice and simple orzotto for quick and hearty family meals that will definitely become an addition to your recipe book.

INGREDIENTS

  • 300 g of shrimps (shells removed)
  • 500 g ILIS orzo
  • 50 g olive oil
  • 1 red onion, finely chopped
  • 1 clove of garlic, finely chopped
  • 1 carrot, diced
  • 1 zucchini, diced
  • 2 tomatoes, grated
  • 50 ml ouzo
  • A small chunk of feta cheese
  • Salt and pepper
  • Truffle olive oil

INSTRUCTIONS

  • Add the olive oil in a pot and sauté the shrimps. As soon as they turn red, remove from the pot.
  • In the same pot, add the vegetables and mix lightly until they soften.
  • Add the ouzo and, when the alcohol evaporates, add the grated tomato.
  • Add 500ml of water, salt and pepper.
  • Bring the water to a boil, add the orzo and stir for 2 minutes so that the orzo doesn't stick to the bottom of the pot. Cook over low heat for about 10 minutes.
  • Turn off the heat, add the shrimps and cover the pot. Let it sit for 10 minutes.
  • Serve in a deep dish with crumbled feta and a few drops of truffle oil.
