STUFFED SQUID WITH HERBS AND ILIS WHEAT TRAHANA

INGREDIENTS

  • 1κgr. squid
  • 2 finely chopped dry onions
  • ¾ bouquet till
  • ½ bouquet parsley
  • 3-4 green onions
  • ½ glass tsipouro with anise
  • 300gr. ILIS wheat trahana
  • 300gr.  water
  • Salt & pepper

RECIPE

Clean up the squid and separate the tentacles. Wash them thoroughly and leave them to dry. Heat the olive oil in a pot and sauté the dry onions for about 5 minutes.  Chop the green onions, till and parsley, throw them in the pot and leave them to cook for 2-3 minutes. Add the trahana and after 2 minutes deglaze with the tsipouro, season and, finally add the water. Wait until the trahana has soaked all the liquids. After the mixture is cold, fill the squid. Plug the hole with the tentacles and secure with a toothpick. Heat some olive oil in a pan and sauté the squid until they brown on both sides. Remove the squid and place them in a griddle, add some water and bake for 25 minutes at 200 degrees.
